Restaurants and foodservice operations provide one of the most difficult environments in which to clean. Mopping is an inexpensive, and ineffective, way to maintain floors in restaurants. Mopping is typically done using an alkaline degreaser to break up the grease found on the floor. In actuality, this simply makes the problem worse and the floor more dangerous. Alkaline detergents combine with animal fats, the grease on the floor, to create a crude form of soap through a process called “saponification.” Without scrubbing and removing the slurry from the floor, the crude soap created in the mopping process can become slippery when wet.
Not only do customers make decisions about whether they return to a restaurant based on the food, but they also strongly consider the cleanliness of restrooms, often making assumptions about the cleanliness of the kitchen based on what they find in the restroom.

Restoring traction on floors
Environments where food is fried will have airborne grease that travels from the kitchen to the dining area. Mopping these areas with alkaline products to break up grease can result in a crude form of soap that is left behind, which can be slippery and dangerous.
