Food Service Floor Cleaning

Restaurants and foodservice operations provide one of the most difficult environments in which to clean.  The airborne grease that settles not only in the kitchen but in the dining room as well, creates an environment that can be slippery and dangerous for customers as well as workers.  With cost estimates of over $20,000 per incident, slip and fall accidents are serious matters for restaurants.

Mopping is an inexpensive, and ineffective, way to maintain floors in restaurants.  Mopping is typically done using an alkaline degreaser to break up the grease found on the floor.  In actuality, this simply makes the problem worse and the floor more dangerous.  Alkaline detergents combine with animal fats, the grease on the floor, to create a crude form of soap through a process called “saponification.”  Without scrubbing and removing the slurry from the floor, the crude soap created in the mopping process can become slippery when wet.

Not only do customers make decisions about whether they return to a restaurant based on the food, but they also strongly consider the cleanliness of restrooms, often making assumptions about the cleanliness of the kitchen based on what they find in the restroom.

Restoring traction on floors

Environments where food is fried will have airborne grease that travels from the kitchen to the dining area.  Mopping these areas with alkaline products to break up grease can result in a crude form of soap that is left behind, which can be slippery and dangerous.  The mechanical scrubbing action of the Square Scrub Pivot and Doodle Scrub break up the grease and ready it for removal from the floor by squeegeeing it to a drain or vacuuming it up.

Cleaning grout lines

Grout lines are the low spot on any floor, so water, detergent, and soils settle there.  Not only do these soils discolor the grout lines, but left in the grout lines the food content can break down and cause odors.

  • In smaller areas like restrooms and kitchens, periodic deep cleaning with the Doodle Scrub and the 3D Blue Tile & Grout Pad breaks up the soil in the grout lines.
  • In larger areas like dining rooms, periodic deep cleaning with the Pivot and 3D Blue Tile & Grout Pad is great for quickly cleaning grout lines.

Daily maintenance of dining room floors

The Doodle Mop is a great solution for maintaining restaurant floors on a daily basis.  The Doodle Mop applies 4100 rpm or orbital cleaning power to single-use microfiber mop heads, which allows you to get rid of dirty, grungy string mops.  

  • String mops do little more than move dirt around the floor, but microfiber mop heads capture and hold soils for removal.
  • Single-use microfiber mop heads are inexpensive, sanitary, and virtually eliminate the potential for cross-contamination.
